Professional Baking and
Pastry Diploma
The new Professional Baking and
Pastry Diploma Program at
Kitchen Academy’s Sacramento
campus applies the exclusive
Accelerated Training System™ to
the pastry kitchen. Starting
with the fundamentals, and
layering on increasingly
challenging techniques as the
stages advance, the program is
designed to help prepare
students for careers in the
professional pastry kitchen in
as few as 30 weeks. The
40-credit Professional Baking
and Pastry (PBP) Diploma Program
consists of five terms of study
(a term is considered a 6-week
block of instruction). Students
are not required to have any
previous kitchen experience.
Moving from introduction to
mastery of breads, confections,
plated desserts, doughs, cakes,
decorating and more, students
can use their Kitchen Academy
experience to help them pursue
careers in roles in a
professional kitchen that may
include pastry chef,
confectioner, cake decorator and
caterer.
This institution has received
temporary approval to operate
from the Bureau for Private
Postsecondary and Vocational
Education in order to enable the
Bureau to conduct a quality
inspection of the institution.
